Rotisseri Chicken

We are cooking a full chicken for the first time on the Ronco Rotisseri Oven. I made an Olive Oil with Italian seasoning rub for it, and the chicken smells delicious. I cannot wait to taste it.

Update: The chicken tasted great and was so moist and tender. We have some ideas on how to do the marinade/seasoning rub for next time.

Powdery Snow and Toby






We have over 6 inches now, but I didn't go out to measure this time. The snow is so fine and powdery, so you can't make snowmen. You can, however, pick up a handful and toss it at each other (like mom and I did). Lets just say, at 19 degrees, the snow is cold when it goes down your shirt! Toby was very excited to go explore the snow, however, since it is so fine and soft, he couldn't walk on top of it. This meant that his little body sunk in the deep snow, and he was not a fan. I finally picked him up and later made him a little hole to stand in. Macy, who normally doesn't like the snow, thought this snow was fun and took off running, jumping, and playing. Very cute to watch! It is supposed to start snowing again later this evening, so it will be interesting to see what tomorrow holds.

Winter Wonderland!




This morning, we woke up to 6 inches of snow! Here are some pictures of the snow this morning. There is still a wintery mix of sleet/snow going on now, and the meteorologists are calling for more snow later today. I can't wait to see how much snow we get all together.

A little helper...



My brake light had been occasionally coming on recently, but quickly going back off. I asked Mike about it today, and he decided to come over to add some brake fluid to my car. Toby decided to go out to the garage to offer a helpful paw. I'm not sure that he provided any help, but he sure is cute!

Toby's Ducks



Toby saw the ducks that hang out at the lake behind our townhouse recently. Mom and I took him outside so that he could get a better view of them, and he whined to be let down to play with them. No surprise, they quickly waddled down to the lake and started swimming around. I'm sure he and I will be seeing a lot more of these birds once Spring arrives.

Toby's Basket

Toby got a basket to put all of his toys in for Christmas. He isn't really fond of the basket, and I think he still isn't sure that he is allowed to get toys out of it. Today, I tipped the basket over sideways, and here is the result. He has pulled out all of his toys out!

Good News


My MRI results came in today, and the good news is that the initial AC separation that I had has nearly healed (which is typical according to the research that I had done). However, I do still have a lot of inflammation around my collar bone (AC Joint where the separation occurred) and because of the trauma, my supraspinatus muscle (part of the rotator cuff) now has tendonitis. The good news is, no surgery! Unfortunately, I still have a lot of healing to do to make sure that everything that is injured, doesn't get worse. I have another orthopedic appointment on Monday, so I will have to see what he says for certain.

Baby, it's cold outside




As most of you know, it has been extremely cold outside lately, with temperatures generally staying below freezing. I noticed this morning when I looked out to the little pond behind my townhouse, that it is freezing over! I took a few pictures to share with everyone, kind of neat to see.

On the news on my shoulder, I finally have an appointment set up with the orthopedist on Monday, so that will be nice to get a clearer picture of what is going on for certain.

Set it and Forget it

My mom got a Ronco Showtime Rotisserie from my stepdad for Christmas. We are trying it out now with chicken breasts with a barbecue rub. In 45 minutes, we will know how it works.

Update: The chicken turned out so moist and juicy. Very yummy, and I can't wait to see how everything else turns out on it!

Happy New Year!!!

Welcome to 2010! This is the first year of the 2nd decade of this millennium, how exciting! I'm not sure that I am starting it off to a perfect start though. Unfortunately, when it snowed 2 weeks ago, I was going into work, and slid on the ice and fell. I injured my shoulder, and now I am in a sling and awaiting a MRI and an Orthopedist consultation. My doctor believes that I may have separated my AC (a joint between the shoulder blade and collar bone). The bad news is, this is a painful injury, as it involves torn ligaments. The good news is, this injury usually does not involve surgery. In the meantime, I stuck in a sling and not allowed to use my left arm (good thing I am right handed). I will keep everyone up to date on the progress, but if it is the AC joint separation, it will be 4 weeks of immobilization, then slowly work into use again. The good news is, I am getting talented at performing tasks with one arm. My coworkers tell me this will be a good skill to learn, especially way down the road when I have children (so I can hold a baby and perform all necessary tasks). Haha, I've got to look on the bright side, right?

I did however start off this year with a great and permanent job. That's right, no more traveling as a part of my job. I am working with a great group of therapists (who have all been helpful during this time of my injury) at a nursing home in High Point. This means that Toby and I are very close to my mom's house, so that has also been helpful during this injury. I am looking forward to 2010 and seeing what this year will bring me, especially since I won't be moving every 3 months.
